Sticky, Saucy Meatloaf

  • 500g mince
  • 500g sausage meat
  • 1 apple, peeled & grated
  • 1 onion, diced
  • 1 tbsp curry powder
  • 1 cup breadcrumbs (GF)
  • 2 tbsp mixed herbs, dried
  • 1 stock cube, crumbled
  • 125ml sour cream
  • 1 egg
  • handful fresh herbs, chopped
  • salt and freshly ground black pepper
  • 1 tbsp balsamic vinegar
  • 1/2 cup water
  • 1/2 cup tomato paste
  • 1 tsp ground coffee
  • 1/2 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 30g butter



Preheat oven 180C. Lightly grease one large baking tray or 2 loaf tins.

Combine all the sauce ingredients together in a saucepan and cook for about 5 minutes, making sure the sugar has dissolved.  Remove from the heat and set aside.

Mix all the meatloaf ingredients together in a large bowl. Season with salt and pepper.

Scrape into your tin(s) and cover with foil. Bake for 40 minutes. Remove from the oven and pour off any fatty juices.

Warm the sauce and pour over the loaves. Return, uncovered to the oven and cook for another 20 minutes. Spoon the sauce over the loaves mid-way.  Remove when the top is sticky and the sauce is thick and bubbling.

Serve: with garlic mash OR a tossed green salad OR slice and pop in soft rolls with cheese and coleslaw.
