Apricot energy balls
This super simple recipe is the perfect snack for little lunch boxes, as well as big ones! With no added sugars and gluten free, this is destined to be a crowd pleaser.

Ingredients
- 1 cup dried apricots, chopped
- 1/2 cup desiccated coconut
- 1/2 cup pitted fresh dates, chopped
- 1/4 cup cashews
- 1/4 cup ground almonds
- 2 Tbsp coconut oil
- 2 Tbsp honey
Method
- In the food processor add apricots, coconut, dates, cashews, and almonds. Blend
- Add coconut oil and honey, and pulse until blended
- Roll into small balls and chill in fridge until firm
