A healthier take on Chocolate Mousse, this treat is good enough for Junk Free June! The recipe makes enough mousse to serve four people, and can be made in advance. Just remember to include the 'chill' time of 60 minutes in the total time.
- flesh of 1 young coconut
- 1/4 cup water
- 2 medjool dates, pitted & chopped
- 1/2 cup raw cashew nuts
- 3 tbs cacao powder
- pinch of salt
- mixed berries to serve
- Place the flesh of 1 young coconut, ¼ C of water, 2 medjool dates, pitted and roughly chopped, ½ C raw cashew nuts, 3 tbs cacao powder and a pinch of salt into a Blender and process until creamy and smooth.
- Pour mixture into 4 glasses and let set in the fridge for an hour.
- Top mousse with fresh berries or fruit.
