Christmas Gingernuts

This recipe is yummy anytime of the year but is perfect for making with the kids on Christmas Day! Don't flatten the cookie dough - it spreads on its own. Happy baking!

  • 100 grams butter
  • 1 Tbsp golden syrup
  • 1 cup sugar
  • 2 tsp ground ginger
  • 1 tsp vanilla essence
  • 1 large egg
  • 1 3/4 cups plain flour
  • 1 tsp baking powder


  1. Heat oven to 180 degrees celcius
  2. Line a baking tray with baking paper
  3. Melt butter, and add to mixing bowl
  4. Dip tablespoon in hot water, then measure golden syrup into mixing bowl
  5. Add sugar, ginger, and vanilla to mixing bowl. Mix well
  6. Add egg, mix well.
  7. Sift flour & baking powder into bowl, mix well
  8. Place mixture in fridge until firm
  9. With wet hands, roll teaspoonfuls of mixture into balls, leaving room to spread
  10. Bake one tray at a time, for 10 minutes until golden brown
  11. Transfer to cooling tray to cool
