Raw Caramel Slice

This raw caramel slice is so good, it's almost good for you! Treat yourself during Junk Free June with this delicious take on the traditional caramel slice.

Ingredients

  • Base
  • 2 1/2 cups raw pecans
  • 4 medjool dates, pitted & chopped
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1 tbs maple syrup
  • 2 tbs water
  • Caramel
  • 1 cup coconut oil, in liquid form
  • 1/2 cup almond butter
  • 1/2 tsp vanilla paste
  • 1/4 cup maple syrup
  • pinch of salt
  • Chocolate Icing
  • 130 grams cacao butter
  • 1/3 cup cacao powder
  • 1/4 cup maple syrup
  • 1 tbs honey

Method

  1. Combine; 2 ½ C raw pecans, 1 C shredded coconut, 4 medjool dates, pitted and roughly chopped, ½ tsp salt, ¼ tsp cinnamon, 1 tbs maple syrup and 2 tbs water in a Food Processor until thoroughly mixed together.
  2. Line a Slice tin with Baking Paper and firmly press mixture into it until smooth and flat.
  3. Place in freezer.
  4. Clean out Food Processor and add 1 C coconut oil, in liquid form, ½ C almond butter, ½ tsp vanilla paste, ¼ C maple syrup and a pinch of salt.
  5. Process until smooth and pour on top of base mixture.
  6. Place in freezer again.
  7. Melt 130g cacao butter in a saucepan.
  8. Remove from heat and add 1/3 C cacao powder, ¼ C maple syrup and 1 tbs honey.
  9. Whisk together and gently pour on top of caramel layer.
  10. Return to freezer and allow to set for 15mins.
  11. Slice into small pieces
