Air Fryers

By rapidly circulating hot air within the appliance, an air fryer will cook your meal quickly and retain all its flavours that would normally be cooked away on a cooker. Air fryers are very flexible as well; you can cook hot chips, meats and pastries and more. Using less oil than a traditional fryer they are marked as a much healthier option.

Delicious roasted rack of lamb with a macadamia crust

Serves 4, takes 10 minutes to prepare and only 30 minutes to cook.

Ingredients:

  • 1 garlic clove
  • Tea
  • 1 tablespoon olive oil
  • 800 g rack of lamb pepper & salt
  • 75 g unsalted macadamia nuts
  • 1 tablespoon breadcrumbs (preferably homemade)
  • 1 tablespoon chopped fresh rosemary
  • 1 egg

Method:

  • Finely chop the garlic. Mix the olive oil and garlic to make garlic oil. Brush the rack of lamb with the oil and season with pepper & salt.
  • Preheat the Air Fryer to 100°C.
  • Finely chop the nuts and place them into a bowl. Stir in the breadcrumbs and rosemary. Whisk the egg in another bowl.
  • To coat the lamb, dip the meat into the egg mixture, draining off any excess. Coat the lamb with the macadamia crust.
  • Put the coated lamb rack in the Air Fryer basket and slide the basket into the Air Fryer. Set the timer for 25 minutes. After 25 minutes, increase the temperature to 200°C and set the timer for another 5 minutes. Remove the meat and leave to rest, covered with aluminium foil, for 10 minutes before serving.
Chef’s tip: You can replace the macadamia nuts with pistachios, hazelnuts, cashews or almonds if desired.

Ingredients:

  • 1 garlic clove
  • Tea
  • 1 tablespoon olive oil
  • 800 g rack of lamb pepper & salt

  • Cut the fish into four equal pieces and rub with lemon juice, salt, and pepper. Let the fish rest for 5 minutes.
  • Grind the tortilla chips very fine in the food processor and transfer the ground tortilla chips to a plate. Beat the egg in a deep dish.
  • Dip the pieces of fish into the egg one by one and roll the pieces of fish through the ground tortilla chips so that they are completely covered.
  • Scrub the potatoes clean and cut them lengthwise into thin strips. Soak the potato strips in water for at least 30 minutes. Drain them thoroughly and then pat them dry with kitchen paper. Coat them with oil in a boil.
  • Insert the separator in the Air Fryer basket. Position the potato strips on one side and the pieces of fish on the other.
  • Slide the basket into the Air Fryer. Set the timer to 12 minutes and fry the potatoes and the fish until they are crispy brown.


The classic Fish & Chips

Serves 2, takes 15 minutes to prepare and only 12 minutes to cook.

Ingredients:

  • 200 g white fish filet (tilapia, cod, pollack)
  • 30 g tortilla chips
  • 1 egg
  • 300 g (red) potatoes
  • 1 tablespoon vegetable oil
  • ½ tablespoon lemon juice

Method:

  • Preheat the Air Fryer to 180°C.

Food steamers use hot steam in a sealed container that holds the food to cook meals in minutes.

Some steamers have multiple compartments that allow you to cook various elements of your dish at once. Using no oil at all, a steamer offers a very healthy method of preparing your food.

Warm potato and smoked trout salad

Serves 4 and 40 minutes to prepare (if served hot)

Ingredients:

  • 375g Desiree potatoes, quartered
  • 1 large or 2 small smoked trout
  • 1/2 cup French dressing
  • 1/3 cup mayonnaise
  • 3 chopped spring onions
  • 2 tablespoons chopped flat parsley
  • Pepper
  • Pinch sea salt

Method:

  • Place the prepared potatoes in the base of a steamer basket. Set the timer and cook for 25 minutes, or until cooked. Set aside until cool enough to handle, then cut into large cubes.
  • Transfer to a bowl. Carefully remove the flesh from the trout, making sure all small bones have been removed. Flake fish or cut into small pieces. Place into the bowl with the potatoes.
  • Add spring onions, parsley, salt and pepper.
  • Mix together dressing and mayonnaise then pour over the potato mixture. Gently but thoroughly stir together. Serve at room temperature.

Indian spiced beef kebabs

Serves 4 to 6 people, takes 20 minutes to prepare and only 10 minutes to cook.

Ingredients:

  • 600g beef sirloin, cut into 2cm cubes
  • Ginger, 2cm peeled & roughly chopped
  • 1 clove garlic
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground turmeric
  • 2 tablespoons peanut oil
  • Salt & pepper to taste
  • 6 kebab sticks

Method:

  • Skewer beef onto kebab sticks and place in a shallow dish.
  • Combine remainder of ingredients in a food processor and blitz for 30 seconds. Pour over beef kebabs and turn to coat in the marinade.
  • Heat your George Foreman® and when it reaches temperature, place the kebabs on the grill. Cook for 6-8 minutes, turning every minute to ensure the kebabs cook evenly. Serve over jasmine rice with a dollop of yoghurt, squeeze of lime and fresh coriander.

Chilli Con Carne

Serves 4, 15 minutes to prepare and 6 hours to cook.

Ingredients:

  • 2 tablespoons olive oil
  • 2 onions diced
  • 2 clove garlic, chopped
  • 1.5kg mince beef
  • 1 tablespoon ground cumin
  • 3 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin red kidney beans, drained and rinsed
  • ½ cup beef stock
  • 2 bay leaves
  • Salt and freshly ground black pepper

Method:

  • In a large fry pan, heat oil over medium high heat and cook onions and garlic for 2-3 minutes, stirring occasionally until soft.
  • Add mince to fry pan in batches and cook until mince is brown and crumbly.
  • Stir through dried spices and cook a further 1 minute until fragrant.
  • Transfer mixture to slow cooker, add tomatoes, red kidney beans and bay leaves. Cover and cook on High 3-4 hours or Low 6-8 hours.
  • Remove bay leaves & season to taste, serve with rice or tortillas.

Handy Tips

  • Eggs should be at room temperature to give better volume when making cakes and sponges.
  • When preparing dough for making bread ensure water and liquids are added at a warm or tepid temperature. If it's too hot this can kill the yeast.
  • When mixing, start the mixer at a lower speed then gradually increase to recommended speed, especially when adding dry ingredients to avoid mess.

Caramel Chip Peanut Butter Cookies

Prep 25 minutes / Cook 15–18 minutes

Makes 36

Ingredients:

  • 125g butter, softened
  • 1 cup (280g) crunchy peanut butter
  • 1 cup (220g) firmly packed brown sugar
  • 1 egg
  • 1 3⁄4 cups (260g) plain flour
  • 1⁄2 teaspoon baking powder
  • 1⁄2 cup (70g) roasted salted peanuts, chopped
  • 1⁄2 cup (95g) caramel choc chips (see note)

Method:

  • Preheat oven to 170°C fan forced. Line two baking trays with baking paper.
  • Assemble mixer using scraper beater. Add butter, peanut butter and brown sugar to bowl. Slowly turn mixer to LIGHT MIXING setting and beat for 30 seconds. Increase speed to CREAMING / BEATING setting and beat for 2 minutes until pale and creamy.
  • Reduce speed to LIGHT MIXING setting; add egg and beat for 30 seconds. Sift the flour and baking powder over the butter mixture. Increase speed to FOLDING/KNEADING setting and beat for about 30 seconds or until just combined.
  • Remove the bowl from the mixer and stir through the peanuts and caramel choc chips. Roll tablespoons of mixture into balls. Place onto prepared baking trays, allowing room for spreading. Flatten with fingertips to about 1cm-thick. Bake for 15–18 minutes or until golden. Allow to stand on trays for 5 minutes before transferring to a wire rack to cool. Repeat with remaining cookie mixture.

Note:Caramel choc chips are available in baking section of most supermarkets, alternately use white, milk or dark choc chips.

Butternut Squash Soup

Ingredients:

  • 1 Clove Garlic
  • 5 Leaves Sage
  • 1 Butternut Squash
  • ¼ Cup Cashews

Directions:

  • Roast butternut squash. Cut squash in half, remove seeds, rub with 1 Tbsp olive oil and roast at 400 degrees for 55 minutes, or until fork-tender.
